Heaven in the simplest of places!
Admittedly we don't have everything - not even most of what we want. With that said, Christy and I are extremely grateful for everything we do have - and see our lives as getting better and better - by the day.
Among our great joys is enjoying the foods we eat. Through careful planning - we are able to eat out 4 times/week - at places we enjoy and which enable us to have great meals on a budget. These include Velat Pizza - where we have either a Steak and Steak sub, fries and onion rings, cheeseburgers with fries and rings or a great pizza with onion rings, Nikas - where we have a great choice of meals all around $16.95 including soup (and where you can byob) and Playgound Poker - where we enjoy our Friday meal at lunch and Sunday Breakfast Buffet.
To go along with this we also enjoy several great little meals at home I'd like to share with you:
- Bagel with cream cheese and jam. Christy calls this Heaven on Earth! It consists of day old poppy seed bagels we get 12/$9.00 from Dizz's Bagels on Cote St Luc Road, a 500ml tub of Philly Cream Cheese we get from Costco for $5.00 and Selection Pure Raspberry Jam from Super C at $3.79 for 500ml. Many people know bagel and cream cheese - the jam takes it over the top!
- Heavenly KD. Early in our relationship Christy told me she could eat KD once/week - but only if made her way! So I indulged her and let her make it - and the results were amazing! We got 12 boxes of KD at Super C for $9.97! Tonight she was not feeling the greatest and it was her turn to make dinner - KD. I told her I would take the reins and try to make her meal - my way. The result - which we both agreed - was that it was even better! So, here's the recipe: Dice one medium onion. Put in a bowl and microwave for 90 secs. Cut two hot dogs, first along their length and then into 1/4" wide half moons. Add these to the sweated onion mixture. In a microwave safe bowl, combine 1&3/4 cups of water with the noodles. Microwave on high for 9 minutes, stirring every 3 mins. Remove the mixture and add 1/4 cup of milk, i tbsp of margarine, the cheese sauce mix, 1-2 tbsps of ketchup and salt and pepper to taste. Mix until well blended. Add the onion/hot dog mix to the bowl, stir and microwave on high for 90 secs. Stir well, serve and enjoy!
- BBQ Chicken with Mashers. This is an easy and amazing dish! Get a BBQ chicken from you local grocer. At Super C they are $9.99. At Costco - $7.99. At Dollarama, pick up Betty Crocker Butter and Herb Mashed Potatoes ($2.50) and Ocean Spray Cranberry Sauce ($2.75). The mashed potatoes, cranberry sauce and chicken all are good for 4 portions - or 2 meals for 2. This meal, while it doesn't have any veggies associated with it - is a great Sunday special meal - for $3.75/serving!
I sincerely hope you try all 3 of these great little meals. They are easy, economical and great!
All my love,
